Recipe: Pesto bites

I love pesto (especially when it's homemade and uses home grown basil!) -- but don't always want it on pasta.  That's why this recipe is great-- it's quick, easy, and can be made as a snack or a light meal.

 

 

Ingredients

  • Bagel, cut in half (You can also use mini baguettes, ciabatta rolls, etc) 

  • Pesto 

  • Cream cheese

  • Feta (you can also throw Parmesan on if you don't have any feta)

  • Tomatoes or bruschetta 

Directions

  1. Cut your bread or bagel in half, laying the pieces side by side

  2. In a small bowl, combine roughly one spoonful of pesto with one spoonful of cream cheese -- mix

  3. Spread the pesto / cream cheese mixture onto your bread

  4. Top with feta or parmesan 

  5. Place in toaster oven or oven on toast for ~3 minutes or until cream cheese begins to bubble and melt

  6. If you'd like a crispier top, after toasting, turn on broiler in toaster oven and cook until golden

  7. Remove from oven and top with sliced tomatoes or bruschetta
